It is produced both naturally and synthetically. With a hydroxyl group adjacent to the carboxyl group, lactic acid is classified as an alpha-hydroxy acid -AHA-. These properties are the reason that SSL is an excellent emulsifier for fat-in-water emulsions and can also function as a humectant.
