Other information: IGP « C'est entre 854 et 859 que les moines de Saint-Sauveur-De-Redon reçoivent en donation plusieurs marais-salants. Aujourd'hui, ils sont exploités par des producteurs appelés paludiers. Leurs techniques de travail ont peu évolué. L'eau de mer est admise dans les salines lors des fortes marées. Elle avance lentement et se concentre progressivement en sel jusqu'à atteindre les bassins finaux, dits œillets. Dans les œillets, la concentration se poursuit sous l'effet du soleil et du vent jusqu'à saturation. De fins cristaux de sel apparaissent alors et flottent en plaques à la surface de l'eau, c'est la fleur de sel. Rare ! La production est faible. Elle est "cueillie" avec un instrument spécifique : la lousse. Elle s'utilise comme du sel fin mais sa saveur est incomparable ». Coopérative Les Salines de Guérande Récoltée manuellement
