Other information: étoile CONGELE 500g e La langouste caraïbe vit à l'état sauvage dans les eaux claires des Caraïbes, à différentes profondeurs selon les variations saisonnières de la température de l'eau. La pêche se fait par plongée et/ou avec casiers, à des profondeurs allant jusqu'à 5 mètres. Soucieux de préserver les ressources en langoustes, les pêcheurs respectent une période d'arrêt obligatoire de pêche dit "arrêt biologique" de 4 mois correspondant à la période de reproduction des langoustes caraïbes. Tampon CARAIBES Crues non décortiquées / recette au dos

Preparation: Utilisation avec décongélation préalable : Plongez les queues de langoustes 15 à 30 minutes dans de l'eau froide puis faites les cuire immédiatement selon la recette choisie. Cuisson sans décongélation préalable : Faites cuire les queues de langouste dans un court-bouillon aromatisé pendant 15 à 20 minutes.

Recipe idea: Queues de Langouste caraïbe tièdes aux agrumes 2 personnes - Préparation : 30 minutes Ingrédients : 2 Queues de Langouste caraïbe crues 1 pamplemousse rose 2 oranges 2 cuillères à soupe de fumet de poisson en poudre 1 œuf extra frais 1 cuillère à soupe de moutarde 25cl d'huile 1/2 citron Sel, poivre Dans un très grand faitout, mettez le fumet de poisson avec 2 à 3L d'eau afin que les queues de langouste caraïbe soient bien immergées. Portez à ébullition. Dès que le liquide frémit, plongez-y les crustacés et comptez 15 minutes de cuisson. Égouttez-les puis laissez-les tiédir. Pendant ce temps, préparez la sauce : pressez le demi-citron et une demi-orange. Séparez le blanc d'oeuf du jaune. Battez le blanc en neige ferme, réservez-le au frais. Dans un saladier, mélangez au fouet le jaune et la moutarde, le sel, le poivre, en incorporant l'huile en filet, comme une mayonnaise. Ajoutez à mi-parcours le jus citron-orange, fouettez, puis incorporez délicatement le blanc en neige. Réservez la sauce au réfrigérateur jusqu'au moment de servir. Pelez le reste des agrumes, c'est à dire les débarrasser des membranes qui entourent les quartiers. Ouvrez les queues de langoustes tièdes en deux dans le sens de la longueur, à l'aide d'un grand couteau. Disposez-les dans un plat et garnissez-les de quartiers d'agrumes. Servez tiède avec la sauce bien fraîche. Bon appétit !
