Logo IGP Logo Savoie "Historiquement fabriqué depuis le moyen âge, la production d'Emmental de Savoie devient significative au début du 19ème siècle et en fait l'un des principaux fromages des deux Savoie. Il fut à l'origine de la mise en place des fruitières, lieux où les producteurs regroupaient leur lait pour en fabriquer ce fromage, le fruit de leur travail. L'Emmental de Savoie Reflets de France est fabriqué en Haute-Savoie à partir de laits issus des terroirs savoyards*. La meule est affinée traditionnellement. Les passages successifs en cave froide, puis en cave tempérée, et enfin en cave chaude*, lui donnent ses trous, sa forme bombée, sa pâte souple et son goût fruité si caractéristiques." *conformément aux exigences de l'IGP Luc Chabert, 3 ème génération des Fruitières Chabert, Maîtres Fromagers depuis 1936.
