They are widely used in the food industry, for their gelling, thickening, and stabilizing properties. Their main application is in dairy and meat products, due to their strong binding to food proteins. There are three main varieties of carrageenan, which differ in their degree of sulfation. Kappa-carrageenan has one sulfate group per disaccharide, iota-carrageenan has two, and lambda-carrageenan has three. Gelatinous extracts of the Chondrus crispus -Irish moss- seaweed have been used as food additives since approximately the fifteenth century. Carrageenan is a vegetarian and vegan alternative to gelatin in some applications or may be used to replace gelatin in confectionery.

Preparation: Prévoir d'ajouter 1/2 litre de lait demi-écrémé pour 1 sachet AU FOUR A MICRO-ONDES : 1. Délayez le contenu d'un sachet dans 1/2 litre de lait demi-écrémé dans un récipient spécial four à micro-ondes. 2. Faites chauffer à pleine puissance pendant 2 min 30 s à 3 min 30 s pour porter le mélange à ébullition. Mélangez bien. 3. Versez la préparation dans un moule ou dans 5 ramequins. 4. Laissez refroidir. Mettez au réfrigérateur et servez frais. À LA CASSEROLE : 1. Portez à ébullition 1/2 litre de lait demi-écrémé dans une grande casserole. 2. Lorsque le lait bout, retirez la casserole du feu et versez immédiatement le contenu d'un sachet. Remuez vivement à l'aide d'un fouet. 3. Remettez à feu doux pendant 2 minutes tout en remuant. 4. Versez la préparation dans 5 ramequins et laissez refroidir. Mettez les ramequins au réfrigérateur pendant 2 heures avant de les servir.
