Preparation: Sans décongélation préalable. Au court - bouillon : plonger les noix de Saint-Jacques dans un court-bouillon froid. Porter à ébullition et laisser frémir pendant 4 minutes après ébullition, égoutter et passer sous l'eau froide. À la poêle : faire saisir les noix de Saint-Jacques dans un peu d'huile d'olive pendant 3 minutes par face environ, à feu vif. À la vapeur : placer les noix bien à plat dans le panier vapeur au-dessus d'un court-bouillon frémissant. Couvrir et laisser cuire 5 à 7 minutes.
