Preparation: à la poêle:Cassez les œufs de caille directement dans une poêle bien chaude contenant un peu de matière grasse .Oeufs de caille panés:Pour 6 personnes 18 œufs de caille, 1 cuillère à soupe de farine, 3 cuillères à soupe de chapelure fine, 1,5 cuillère à soupe de lait, 1 œuf de poule, muscade, huile d'arachide, sel et poivre.Faire cuire les œufs de caille pendant 4 minutes dans l'eau bouillante. Ecaler les œufs et les rouler dans la farine. Préparer un mélange œuf, lait, muscade, sel, poivre et y plonger les œufs de caille. Les recouvrir de chapelure. Recommencer l'opération en plongeant à nouveau les œufs dans le mélange œuf/lait, puis dans la chapelure. Faire cuire les œufs par petite quantité dans l'huile chaude. A servir à l'apéritif ou en entrée avec de la salade..oeufs durs:Plonger directement les œufs de caille dans l'eau bouillante salée pendant 4 minutes.
