Preparation: :Prévoir environ 60g par personne, ou le volume d'un verre d'eau pour 2 personnes.Trempage environ 6 heures. Rinçage à l'eau froide. Cuisson à la casserole : couvrir largement d'eau froide. Après ébullition laisser cuire environ 60 minutes. ou Cuisson à la cocotte minute : couvrir très largement d'eau froide. Après mise en rotation de la soupape, faire cuire à feu doux environ 30 minutes. Égoutter. Loubia Haricots blancs en sauce Ingrédients pour 4 personnes : 125 g de haricots lingots trempés la veille, 3 tomates concassées (en conserve), 200 g de viande d'agneau ou de bœuf (en morceau), 1 c. à soupe de concentré de tomate, 1 gousse d'ail écrasée, 1 oignon émincé, 1 branche de céleri avec les feuilles, 1 carotte, sel et poivre noire, 1 c. à soupe de Paprika, 1/2 c. à café de cumin, 1/2 c. à café de curcumin, huile d'olive et vinaigre pour le service. Préparation : Couper le céleri et la carotte en petits dés. Faire blanchir les haricots blancs quelques minutes. Chauffer l'huile d'olive (2 c-a-s) dans la cocotte, et faire revenir l'oignons émincé, ajouter les haricots égouttés, la viande, les tomates, la sauce tomate, les légumes (carotte, cèleri, et l'ail), les épices (sel, poivre noir, cumin et paprika et curcumin). Mouiller avec un petit verre d'eau et laisser imprégner les épices 3 minutes. Ne pas oublier d'ajouter les feuilles de cèleri. Ajouter l'eau suffisamment pour couvrir le tout. Laisser cuire pendant 2 h à feu doux. Servir la soupe aux haricots avec un filet d'huile d'olive arroser de vinaigre, et parsemer de cumin.
