Preparation: 1. 1 kg reife Früchte säubern, sehr fein zerkleinern oder pürieren. Die Früchte mit 1 Packung Gelierzucker (500 g) und dem Zitronensaft vermischen und unter ständigem Rühren zum Kochen bringen. Die Masse mindestens drei Minuten sprudelnd kochen lassen. 2. Gelierprobe: Einen Löffel der Fruchtzubereitung auf einen Teller geben und abkühlen lassen. Ist die Probe nach dem Abkühlen fest und hat die gewünschte Konsistenz, kann die Masse abgefüllt werden. Sollte die Gelierung noch nicht wie gewünscht sein, muss das Kochgut noch einige Minuten länger eingekocht werden. 3. Wenn die Gelierprobe das gewünschte Ergebnis gebracht hat, die heiße Masse in heiß ausgespülte Gläser füllen, zuschrauben und für 5 Minuten umgedreht auf den Deckel stellen.
