It is a lactone of D-gluconic acid. Pure GDL is a white odorless crystalline powder. GDL has been marketed for use in feta cheese. GDL is neutral, but hydrolyses in water to gluconic acid which is acidic, adding a tangy taste to foods, though it has roughly a third of the sourness of citric acid. It is metabolized to 6-phospho-D-gluconate; one gram of GDL yields roughly the same amount of metabolic energy as one gram of sugar. The rate of hydrolysis of GDL is increased by heat and high pH.The yeast Saccharomyces bulderi can be used to ferment gluconolactone to ethanol and carbon dioxide. Preparation: POUR RÉALISER VOS COOKIES(1) : Préchauffez votre four à 180°C (th. 6), de préférence en position chaleur tournante. 1. Versez le contenu du sachet de préparation pour cookies dans un saladier, ajoutez 1 œuf et 50 g de beurre mou. 2. Mélangez le tout à l'aide d'une cuillère en bois jusqu'à l'obtention d'une pâte homogène. 3. Formez 10 boules de pâte et disposez-les sur une plaque de four recouverte de papier cuisson. Aplatissez-les légèrement à la main. 4. Enfournez à 180°C (th. 6) pendant 11 à 15 min, jusqu'à l'obtention d'une légère coloration. (1)Pour garantir vos recettes sans gluten, assurez-vous que tous les ingrédients que vous ajoutez sont sans gluten. ASTUCE : Pour déguster des cookies toujours moelleux à l'intérieur, passez-les 30 secondes au four micro-ondes en position décongélation.
