When used in processed meat such as hot dogs and beef sticks, it increases the rate at which nitrite reduces to nitric oxide, thus facilitating a faster cure and retaining the pink coloring. As an antioxidant structurally related to vitamin C, it helps improve flavor stability and prevents the formation of carcinogenic nitrosamines. When used as a food additive, its E number is E316. Brominated vegetable oil has been used by the soft drink industry since 1931, generally at a level of about 8 ppm.Careful control of the type of oil used allows bromination of it to produce BVO with a specific density of 1.33 g/mL, which is noticeably greater than that of water -1 g/mL-.
