Minced beef with rice and vegetables for 4 people
Preparation: 15 minutes
Cooking time: 40 minutes
350g minced beef – 100g long rice – 4 chopped fresh onions – 225g courgettes sliced into rounds, skin on – 100g finely sliced mushrooms – 1 crushed garlic clove – 100ml crème fraiche - 1 tablespoon lemon juice – 100g grated Comté cheese – 1 tablespoon oil + 1 for oiling the dish – salt – pepper – chili powder. Cook the rice in salted boiling water for about 18 to 20 minutes: it should be al dente. While it's cooking, heat the oil in a frying pan over a medium heat. Fry the beef, onion, courgette and mushrooms together for 5 minutes, stirring often. Remove from the heat. Add the garlic, crème fraiche, lemon juice, half the Comté cheese, and chili powder, season with salt and pepper and mix together. Drain the rice in a colander and add the other ingredients. Mix together and pour into an oiled baking dish. Scatter the rest of the Comté cheese on top. Cook in the oven at 190°C for 30 minutes. The cheese should be melted and the top golden.
