Preparation: Laissez décongeler les filets de Cabillaud pendant 4 à 6 heures au réfrigérateur ou 6 à 7 minutes au micro-ondes en position décongélation en les retournant à mi-temps. Au four traditionnel : préchauffez votre four à 210°C (th.7). Déposez les dos de cabillaud dans un plat adapté sur une grille à mi-hauteur et faites-les cuire 10 à 15 minutes environ A la poêle : Faites saisir les filets 5 à 6 minutes dans un peu de matière grasse chaude, à feu moyen, en retournant à mi-temps. Au court bouillon : Portez à ébullition une casserole d'eau et faites cuire les dos de cabillaud 6 à 7 minutes dans une eau frémissante.
