Preparation: :Retirer l'opercule. Pour faciliter la manipulation des plaques de ravioles, nous vous conseillons de mettre la barquette au congélateur pendant 10 minutes. Porter 2 litres d'eau à frémissement, avec un filet d'huile ou un cube de bouillon de volaille. Retirer les plaques de ravioles de leur papier, et les plonger entières dans l'eau. Remuer délicatement avec une écumoire afin de détacher les carrés. Ne jamais laisser bouillir les ravioles. Laisser frémir une minute seulement et ramasser les ravioles à la surface de l'eau avec l'écumoire (les ravioles sont fragiles, ne pas les égoutter dans une passoire). Les déposer immédiatement dans un plat chaud ou directement dans les assiettes, nappées de crème fraîche tiède ou d'un filet d'huile d'olive. Déguster sans attendre !
